Sheet Pan Gnocchi with Sausage and Tomatoes 

Ingredients (*I cook for a family of 4)

olive oil

2 packages of gnocchi w/ potato

package of sausage (I used kielbasa, but you could use Italian Sausage) 

1 large package of grape tomatoes

salt, pepper, garlic powder and basil

parmesan cheese

 

Directions

Preheat oven 425

Place gnocchi, cut up sausage and tomatoes on a nonstick sheet pan

Drizzle oil over gnocchi and tomatoes

Season with salt, pepper, garlic powder and basil

Sprinkle with parmesan cheese

Bake 10 mins, flip gnocchi, tomatoes and sausage

Drizzle with a teeny bit of oil

Cook additional 15mins (or until sausage is fully cooked)

Top with parmesan cheese if desired
