Mozzarella, Asparagus and Tomato Egg Bake Casserole

Ingredients (I feed a family of 4)

2 tablespoon butter

1 cup asparagus

1 cup mozzarella balls

1 cup 1/2 sliced grape tomatoes

10 eggs

1/2 cup heavy cream

 

Directions

Preheat oven to 350

Add butter to saucepan with asparagus and soften 2-3 mins

Combined heavy cream and eggs

Stir in cheese, tomatoes and asparagus

Add to a nonstick baking dish and cook for 60 mins in the oven (or until eggs are cooked through)

Depending on preference top with sour cream or Franks hot sauce
